Fried Ice Cream Dessert


Ohhhh this is so good!
Anyone that knows me knows that I absolutely love Mexican food and this dessert ranks up there close to #1 in my book.
The first time I had fried ice cream was in the 9th grade when our Spanish class took a field trip to Pittsburgh to eat at the Chi-Chi's restaurant. Lots of fun had on that trip! Since then I've only had it a time or two so to find this quick and easy recipe makes me happy. Now I can make it right here at home.

Fried Ice Cream Dessert

1 stick butter
1 cup sugar
3 cup crushed corn flakes ( I used 2 cups cornflakes and 1 cup graham cracker crumbs)
2 quarts vanilla ice cream (softened)
1 container Cool Whip
1 tsp. cinnamon
honey (optional)

Let ice cream set out for half and hour to soften.
Melt butter in a large skillet. 
Add corn flakes (and graham crumbs) and sugar.
Stir and fry for 3-5 minutes.
Don't let it burn though!
Place 2/3 of the crumbs in a 9X13 pan and set aside.
Place softened ice cream in a large bowl along with the Cool Whip and cinnamon.
Use an electric mixer to combine the three ingredients and then pour over the crumb mixture.
Sprinkle the remaining crumbs over the top, cover with plastic wrap and place in freezer.
When serving you may drizzle a little honey over each piece.

The last time I had fried ice cream was at a Chilis too. I didn't really care for it that much but that was many moons ago.
