Parmesan Cube Steaks & NO Snow!


Big disappointment this morning when we awoke. The news channels were forecasting 4-8 inches of snow overnight but when we got up this morning all that was out there was a light dusting. 
Bummer....we were all hoping for a big snow.
Schools were cancelled though because the surrounding hilltops did get a 4-5 inch blanket of snow. So, even though the roads in town were perfectly clear, the kids had to stay home because the ridge roads were treacherous.
Frustrating to me! 
I don't see why our Dept. of Highways can't seem to keep up with the roads now a days. They always have in the past.
Is it due to a lack of state funds??
I'll stop there before I go on a rant about our whole government system.

While staying indoors on this unsnowy (is that even a word)
day I made these Parmesan cube steaks. Cube steaks are not a favorite of mine but these were really tasty. Coated with flour, browned and then baked, and topped with a spoonful of tomato sauce and mozzarella.

Parmesan Cube Steaks

1/2 cup flour
1 tsp. salt
1/2 tsp. pepper
3 eggs
3 tbsp. water
3/4 cup seasoned bread crumbs
1/2 cup Parmesan cheese
1 tsp. dried basil
olive oil
8 cube steaks
16 oz. tomato sauce
1 tbsp. Worchestershire sauce
1 tbsp. sugar
1 tsp. dried oregano
1/2 tsp. garlic powder
2 cups shredded mozzarella cheese

Bowl #1 
Mix flour, salt and pepper and set aside.

Bowl #2
Whisk together the eggs and water and set aside.

Bowl #3
Mix bread crumbs, Parmesan cheese & basil.

Heat oil in skillet.
Dredge cube steaks in bowl #1, dip in bowl #2 and then into bowl #3.
Place steaks in skillet and brown on both sides.
Once browned, place on a greased cookie sheet.
Bake 400 degrees for about an hour.
Mix tomato sauce, sugar, oregano and garlic powder together.
Spoon a little sauce onto each steak and sprinkle with mozzarella.
Place back in oven to heat the sauce and melt the cheese. 
Enjoy!

Jessica ~ sorry you didn't get the snow you were wishing for.
Know exactly what your thinking about the government ~ I think it's a no win situation.
Your recipe sounds yummy ~ I just wish I was a better cook!!!

Those look good and sorry you missed the big snow, it's the same here with the roads not getting taken care of in the winter anymore, so many accidents because of it too!

We received 8 inches of snow...they were forcasting anywhere from 8-15inches for us! Your recipe sounds great! Come say hi. :)

We had a couple inches, but in town nothing. This county rarely cancels school, which used to frustrate me because we live on one of those ridge roads and that meant my sons having to travel those dangerous roads to get to school, and me worrying all day about their return trip. And back then, they walked a mile each way to the bus, and there are still kids doing that so even if the roads do get cleared, these kids still have a struggle to get to the bus. I guess there's no real solution, unless they go back to smallschools in each community that could open or close depending on local conditions.

Never thought about making cube steaks that way. It's never been one of my favorites either until I started putting them in the crock pot after browning them in the skillet. They come out really tender.

The only snow we've seen this year is a few little flurries, but I'm ready for Spring now.
