Banana-Pineapple Layered Dessert

I know I know the picture is awful but trust me the dessert is yummy and refreshing.

Banana-Pineapple Layered Dessert

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup margarine, melted
3 bananas, sliced
8 oz. cream cheese, softened
3 1/2 cups cold milk
2 (4 oz.) pkgs. instant vanilla pudding
20 oz. can of crushed pineapple, drained
8 oz. Cool Whip, thawed

Place graham cracker crumbs, sugar & margarine in a 13 X 9 pan. Mix well with hands and then press evenly into the bottom of the pan.
Place banana slices on top of crumb mixture in a flat layer.
In a mixing bowl, beat cream cheese until smooth.
Gradually add in the milk and pudding mixes.
Beat until well blended.
Spread that mixture evenly over the bananas.
Spoon pineapple over pudding mixture.
Spread Cool Whip over pineapple.
Refrigerate and ENJOY!

I'm not a fan of banana but this hit the spot and I know that I'll be making it again in the future.
The recipe is similar to the Banana Split Dessert that I posted about HERE but uses less sugar and doesn't require the nuts and cherries to make it look all fancy. Oh, and I don't see why you couldn't use sugar free pudding to lessen the sugar content even more.
Not a whole lot going on in my neck of the woods.
Winter is trying to come back again. We've got temps. today in the low 50's which really isn't that bad but when the wind blows it feels a whole lot colder. We took our daily walk this morning and boy that wind just sliced right through you.
We've got one more day of cooler temps. and frost expected tonight but then it warms back up into the 60's and 70's. The early warm-up that we've been having has really spoiled us or at least it has me.
I didn't get a bit of stitching done over the weekend.
I'm gonna be behind if I don't get busy on my Promises & Borders Block 3 before long.
When it gets nice outdoors I have a hard time making myself sit inside and sew. There is walking, bike riding, grass cutting (which we have done twice already this year) and just sitting outside soaking up the sun to be done.
Oh well, I'll get in the mood soon I hope.

I'm off to fix dinner so I'll catch up with all of you later.

  3. Oh does that look good Jessica! I'd like something nice and cold right now. My husband cut our grass for the first time today. He could have done it last week. Seems like he don't usually cut grass until Easter! This is way early to be cutting grass!

  4. Hi Jessica, with the way the weather changes you just don't know what to do, huh? Since you are out when the temp is higher, take your sewing outside with you, if it is small enough. I've seen women here with their sewing machines out on the porch! That must be a treat for them. Just saying...
Oh, I almost forgot...may I please have a slice of that dessert... looks mighty tasty from where i'm sitting! Hope you have a lovely evening! Luv
