Here's a little sweet treat I made for after dinner tonight. My intentions were to make a "Shamrock Delight" in green and white with mint flavoring but since most of my family aren't real wild about mint I chose to go springy with the pretty pastels and just a hint of vanilla.
This recipe made enough to fill about 7 sundae cups. It was pretty rich (but good) so the next time I make this I will cut the recipe in half and serve it in smaller dishes.
Just letting you know so you can decide whether you'd need a big batch or a mini batch(cut recipe in half).
Springtime Delight
2 (8oz.) packages cream cheese, softened
3/4 cup powdered sugar
1/2 cup milk
2 tsp. vanilla or any other flavoring(may need to use a little less if using another flavor such as mint)
2 (8oz.) containers Cool Whip, thawed
food coloring (red, green & yellow)
small candies to decorate the tops
Beat cream cheese until smooth with mixer.
Add powdered sugar and continue mixing.
Slowly add milk and vanilla.
Continue mixing until soft and smooth.
Add 1 container of Cool Whip and mix slowly.
Divide mixture between 3 bowls.
Add a few drops food coloring to each bowl and stir in. If color is not as dark as you'd like then add a few more drops.
Using the remaining unopened container of Cool Whip begin layering into sundae cups.
Cool Whip
Green Mixture
Pink Mixture
Yellow Mixture
Cool Whip
Top with a few colorful candies
Refrigerate & Enjoy!

Now that would have hit the spot right after dinner tonight! We had temps that reached 80 today! I had the windows open today it was that hot. We actually grilled hamburgers for dinner! :)
