Crock Pot Creamy Chicken & Stuffing with Potatoes

Chicken breasts or tenderloins ( I use frozen)
2 (10 3/4 oz.) cans of cream of chicken soup
1/2 cup water
1 bag stuffing mix
half stick of butter, melted
whole potatoes with skins left on

Grease slow cooker. Place a layer of chicken in the bottom.
In a bowl combine one can of soup with 1/4 cup of water and then pour over chicken.
Place another layer of chicken on top of the soup.
Mix second can of soup with 1/4 cup of water and then pour over chicken.
Top with dry stuffing mix and then drizzle the melted butter over it.
Wash the potatoes and then place a layer of whole potatoes on top of the stuffing.
Cover and cook on high 8 hours.
This is so good! The soup mixture kinda bubbles up the sides of the potatoes.

This recipe feeds our family of five with a little bit left over. You could easily cut the recipe in half and just make one layer of everything. You could also use fresh chicken instead of frozen and cut the cooking time a bit.

I made this the other night and it was very good! Everyone liked it and even Mike made a comment on how good it was. We had some leftover, but not much! I may try to sneak in some broccoli next time. They will only eat it when it is hidden in a chicken casserole. Good recipe!!
