Buttery Sour Cream & Chive Potatoes


My Mother-in-Law used to make these often when I first met my husband and I loved them. I made them the other night and the first thing out of his mouth was.."You used to make these all the time when we first got married." Anyways they are so good! I used dried chives but they would be great with fresh chives.


Buttery, Sour Cream & Chive Potatoes

10-12 potatoes, peeled & diced
1 cup (or more) sour cream
butter
chives
salt & pepper

Place potatoes in pan & cover with water.
Bring to a boil.
Cook till tender but not overdone or they will go to mush.
Drain.
I really hate to say how much butter I use..but here goes!!
I put 1 stick of butter in potatoes and let it melt.
(You could cut way back on the butter if you like!)
Next, add 1 cup of sour cream and 2 tbsp. dried chives.
Fold into potatoes, gently so they don't mash.
Season with salt & pepper and taste.
You be the judge.
Add more sour cream, salt or pepper if needed.

My family loves potatoes but I get sick of cooking them the same way. This recipe sounds deliceous - can't wait to try it :)
