Has anyone ever heard of these before?
My friend Misty has made this meal many times and her whole family loves them. We passed recipes around last summer and my sister-in-law Crys began making them. I looked at the recipe and simply thought wow that's way too many carbs (starch) in one dish so I never even tried it.
Well last week I finally gave in and called to get the recipe from her.
I made them and they were good but I still think it's way too much starch so it's not something I will be making very often. Here's how they are made if you'd like to try them.
Chicken Stuffed Shells
4 chicken breasts
box of large shells (stuff shells)
box of dry stuffing mix (like Stove Top)
3 cups chicken broth
2 cans cream of chicken soup
miralce whip
This made a 13X9 pan so if you only need a serving or two I'd cut this recipe in half.
Boil chicken breasts in water till done.
Take out of water and let cool.
Once cool, cut the chicken into small chunks.
Cook box of stuffed shells in water and then drain. (I think I only used about 24 of these.)
In a bowl, mix the chicken chunks, dry stuffing mix and just enough miracle whip to make it all stick together. ( I used about 1-2 Tbsp.)
Spray a 13X9 pan with cooking spray and then pour 1 cup of chicken broth into the pan.
Stuff your shells with the chicken mixture and stuff them good. (don't under stuff)
Place shells in pan with the chicken broth.
Once all shells are stuffed & in the pan then take and mix 2 cans of cream of chicken soup and 2 cups chicken broth together.
Pour this over top of all the shells.
Cover with aluminum foil and bake 45 minutes at 350 degrees.
The last 5 minutes of baking time I removed the foil to brown slightly.
I served this with mashed potatoes & a vegetable. The soup created a nice gravy to pour over your potatoes.

Well I'm a starch-fiend so those look pretty good to me. Being a vegetarian will turn you into a starch maniac, I'm telling you...

The shells look awesome....I will try the recipe but leave out the potatos and serve aspargus since it is in season with a nice salad on the side...I'm more of a veggie eater...I love my meat at times...but it does look very good...Thanks for sharing...Lisa
