Crispy Buttermilk Chicken


I usually post earlier in the day but today has been one of those days.
I started some spring cleaning yesterday and worked my butt off all day.
After dinner my sister-in-law and I took our nightly 3 mile walk and by the time I got home I sure was feeling it.
I just overdid it a bit. Frustrating because I used to be able to go..go..go all the time and now if I try to go..go..go I end up in misery for a couple days. (Fibromyalgia)
I missed being on the computer yesterday so last night before bed I got on only to learn that I had a problem with my computer so I was up till midnight figuring that mess out.

My intentions for today, since it was going to be cool and rainy was to be lazy and catch up blogs and stitch a bit.
BUT....my youngest son got up with us at 5:30a.m. complaining of an ear ache.
So, off to the Drs. today! She said he has an ear infection so then we headed to the pharmacy. By the time I ran to the store and got back home there wasn't much time to get on the computer.
So here I am...dinner & dishes are done and I finally have time to sit down.
Now I just have to try to stay awake.

Good news is... the weekend is here so I can catch up on some rest and just be lazy. Maybe I WILL get some stitching done after all. I'm sure you are all tired of hearing me whine so I'll get to the chicken recipe. My sister-in-law passed this on to me. It's simple and tasty but it does need to be started a night ahead of time.


Crispy Buttermilk Chicken
(Needs to marinate overnight)

3-4 lbs. chicken
1 cup buttermilk
1/2 cup cornmeal
1/2 cup flour
1 1/2 tsp. salt
1 1/2 tsp. chili powder
1/2 tsp. oregano
1/4 tsp. pepper
1/3 cup melted butter

Place chicken in a large zip bag and add the buttermilk.
Refrigerate overnight to marinate.
Combine the next six ingredients for coating.
Remove chicken from bag and roll in coating.
( I like to cover my pan in aluminum foil for easy clean-up.)
Place chicken on a greased cookie sheet & drizzle the melted butter over top.
Bake uncovered 50-55 minutes at 350 degrees.

That sounds good and NO, not tired of your whining, lol, I whine on my blog too...that's what they're for:) My fibro is acting up all of a sudden and this evening at work was no fun, I'm actually thinking about cutting back to 2 evenings a week. I really need to find a job thats less physically demanding! Hope you enjoy your weekend:)

I hope you can rest up this weekend - there is always sooooo much to do isn't there?!

I am right there with you about the weekend girl. In fact, we are all looking forward to having a spring break in the next week or two, with the different schools that I sub in. The kids are not the only ones ready. (lol)

Was going to try and get some spring cleaning done next week, but the weather here is going to be cold and snowy and rainy. Not gonna get to open the windows or hang laundry one the line and all of the other fun stuff that comes with spring cleaning. I guess I will have to wait till later.

Your chicken recipe looks amazing as always. You are a woman after my own heart with cooking. Love to do it. :)
