Easter Leftovers


We had Easter Dinner at my Mom & Dad's this year. Mom made a ham and I took a turkey breast. We also had scalloped potatoes, green beans, rolls, cheese cake dessert and a DQ Ice Cream Cake. Needless to say, there were plenty of leftovers to go around. We split them all up and today I used mine for a quick dinner.

It's been a great LAZY day here. I got to sleep in this morning, didn't have to cook a big meal and I even found time to stitch a bit.

So here is what I made with the leftovers.
Sorry, this picture makes everything look yellow. Just pretend the potatoes look white cause they were :)

Turkey Bacon Cheese Sandwiches


bread
leftover turkey slices
bacon
cheese
lettuce
tomato
Miracle Whip or Mayo


I fried some bacon and then drained all but about a tsp. of the grease from the pan.
I placed the cold turkey in the same pan and heated it till warm.
The bacon grease just added a little extra flavor & a few more calories:0)
I toasted the bread in the toaster and then assembled the sandwich.
Toast-turkey-bacon-cheese-lettuce-tomato-mayo & any other toppings you wish.
I served this with my sour cream & chive potatoes (which I forgot to add the chives this time) and some applesauce.

We had leftovers too from our Sunday dinner here. It was nice to just be able to heat them up and serve them. My tummy has not been feeling the best today and so I was thankful to have them and not have to stand and cook.

Turkey is one of my favorite meets. :) We eat it a lot for our packed lunches.

DQ ice cream cake sounds really good. Ice cream is one of my down falls in trying to eat healthy.
