Leftovers make easy Shredded BBQ Pork Sandwich Melt


One day last week I put two packages of boneless pork ribs in the crockpot, added a bottle of BBQ sauce and let it cook all day. We had the ribs that night for dinner and then I took the remaining ribs and shredded them and added a bag of shredded cheese to it. I mixed it up and put it in a freezer bag and froze it.

Yesterday was a busy day with schooling, laundry, sewing and hosing a winter's worth of dust off of our three porches. So, at the end of the day I needed something fast for dinner and here's what I came up with.


BBQ Pork Sandwich Melts

5 cups Boneless BBQ Pork Rib leftovers
8 oz. shredded cheese
1 onion, diced
3 carrots, finely shredded
splash of olive oil
1 cup BBQ sauce
buns or toast
American cheese slices

Defrost the bag of leftover BBQ ribs mixed with the cheese.
Saute the onion & carrots in olive oil till tender.
Once veggies are tender then add the pork mixture to them.
Add BBQ sauce and simmer.
Toast bread or buns.
Spoon pork onto bread and top with a slice of cheese.
ENJOY a quick and easy dinner!

You always come up with the neatest ideas, I would of never thought of this, looks YUMMY!!! We had ribs the other day, but I did them on the grill.

that is a cool idea...i especially love that the carrots are added for 'fiber' and good vitamins...you are such a good cook!
