I didn't cook a whole lot this weekend. My husband was out of town spending Mother's Day with his mother so the kiddos and I just ate simple meals. I did get up Saturday morning and make these Lemonade Cookies. I found the recipe in a Taste of Home book and thought I'd give them a try. They are the SOFTEST cookies I have EVER made and love the lemon taste.
Lemonade Cookies
1 cup butter, softened
1 cup sugar
2 eggs
3 cups flour
1 tsp. baking soda
1 (6oz.) can frozen lemonade concentrate, thawed & divided
Sugar to sprinkle on top
In a large bowl, cream butter & sugar till light & fluffy.
Add eggs and beat well.
Combine flour and soda in a bowl and then add it to the creamed mixture alternately with 1/3 cup of the lemonade concentrate.
Drop by rounded teaspoonful about 2-inches apart on a greased cookie sheet.
Bake at 400 degrees for 8-10 minutes.
Remove to wire racks to cool.
Brush warm cookies with the remaining lemonade concentrate.
Sprinkle with sugar and let cool.

I am wondering...if a plateful could also be made with LIMEADE...wouldn't that look pretty for a summertime dinner...

I thought the same thing Penniwig...Limeade, OJ, even Pina Colada??? with some coconut flakes mixed in!
Those sound delicious, but I have no will power and would end up eating most of them. I also love a good tart lemon meringue pie.
