Chocolate Covered Ritz Cracker Treats


Chocolate Covered Ritz Treats

Ritz crackers
Peanut Butter
12oz. bag chocolate chips
12 tsp. canola oil   
*If using a whole box of Ritz then you will need approximately 3 bags of chocolate chips along with 36 tsp. of oil* 

Spread peanut butter on a Ritz and then top with another Ritz. (creating mini Ritz sandwiches)
Continue this until you have used up all the crackers.
In a double boiler melt 12 oz.chocolate chips with
12 tsp. oil.
(If you run out of chocolate and need more then add another bag of chips along with 12 more tsp. of oil.)
Dip Ritz sandwiches in the chocolate and coat both sides well.
Place on a wax paper lined cookie sheet.
When all crackers have been dipped then place the cookie sheet(s) in the freezer and allow the chocolate to harden.
Once hardened, remove from freezer and package in air-tight containers using wax paper between each layer.
Store in refrigerator or freezer until ready to use.

Just a little note about using wax:
I prefer not to use paraffin wax in my recipes so the result is a softer chocolate that melts much easier at room temperature which can lead to messy fingers when eating. This is never a big problem though because most of the recipes that I make are for one or two bite treats thus there is never enough time for them to melt because they are gobbled up too quickly!
However, to remedy the messiness you can add wax to your chocolate when melting to make a more stable chocolate.
I'm not familiar with this step but there are lots of recipes on the internet that will explain how to use paraffin wax.


In other news~

Are any of you snowed in?
We are waiting anxiously to see if we get any snow from this storm. They are predicting a good many inches for us within the next 2 day period but I will believe it when I see it.
Also, my computer is giving me fits. My tower kept shutting down this morning. I couldn't even get the thing to start up at all. I debated on having it looked at to see what was wrong but in the end I placed an order through DELL for a new one. After doing so, I tried one last time to start the computer and it booted right up. Still a bit sluggish but it is on. GO FIGURE!
The new one will be here within the week but until then I don't know how long this one will continue working so if I appear MIA you will know why.

OH YUMMY! My son & I made these yrs. ago and they didn't last for long!!! I hope you don't come up MIA but if so I'll know not to panic;) They are saying we could get up to a foot, BLAH!!!!

YUm YUm .those look good.I printed all your recipes out yesterday.thank you so much.today i made the nut roll ones and the tea tassies.both were just fantastic.I had lots of filling left over from the tea tassies so I will double that batch of dough next time.they both were so good i regreted not doubling to begin with lol.have a great week and thanks for posting more goodies.blessings michelle

This is one of my favorite holiday treats! Yummy! We are already snowed in with a total of up to 12 inches predicted by the time it quits on Tuesday morning. I hate it! I get nervous driving in it which I have to do Monday thru Thursday because of work. Pray for me!

Those look yummy! We make just chocolate covered ritz crackers but we add pure peppermint oil to the chocolate, they taste like the Girl Scout mint cookies. I just got my computer up and running we had a blizzard here in WI he got 11 inches and lots of wind the power went out off and on all night into this morning. Prim Blessings! Robin

Oh wow, those look so gooooooddddd.... I don't know if I dare make them, hubby isn't much for PB and I'd end up eating all of them. I could cut it in half or even in a quarter of the recipe.

We are suppose to get up to 2 feet of snow over the next few days also.

I love these dipped in white chocolate. We are snowed in here in Eastern Ky. We have about 4 or so inches on the ground and expecting around 4 or so more today. The temps are in the negatives. No thawing out soon! Blessings to you!

Recipe sounds delicious and seems easy enough to make. I might make some for my Sunday School girls

Hope you aren't snowed in. We are in the 20's here in Louisiana. That is cold for us. But thank the Lord it is not raining.
We don't have very many days of weather this low. Later in the week we will be back up in the 70's.
Unpredictable weather is what Louisiana is known for.

These are good, but I just melt chocolate bark and dip the peanut butter filled crackers in it, and I don't use oil when I do mine. We've got some snow, not a whole lot, but it sure has been cold.

I make these with white chocolate! Never tried them with regular chocolate, but I bet they are just as good!

Yum! I made these over the holidays, and what a treat! I think they taste just like Tagalongs (the Girl Scout Cookie that used to be called Peanut Butter Patties). I'll definitely be making them again next year!
