Double Chocolate Pudding Cookies



Here is what I was in the kitchen making before I cut my hand on Friday morning.

These turned out pretty tasty. They have a light chocolcate flavor due to the pudding instead of the bitterness of a cocoa powder. I chose to use white chocolate chips but you could use any flavor!
This also makes a large batch so you may want to cut the recipe in half.


Double Chocolate Pudding Cookies

4 eggs
4 sticks butter, softened
2 tsp. vanilla
1/2 cup sugar
4 small boxes instant chocolate pudding
5 cups flour
2 tsp. baking soda
12 oz. bag of chocolate chips (any flavor)

In a large mixing bowl, cream eggs, butter & vanilla and set aside.
In another large bowl, mix sugar, pudding, flour and baking soda.
Slowly mix flour mix into egg mixture.
The dough will be thick.
Stir in chocolate chips and drop by tsp. onto greased cookie sheets.
Bake at 350° for 8-10 minutes.

They sound so good! I have never thought about putting pudding mix in instead of cocoa. Cool idea! I am glad to hear your finger is feeling better!

Those look SO good! Are you resting that hand? Not doing any dishes or attempting to stitch are ya?? Hope it mends quickly so you can get back to making yummy things:)

Yum Yum for my Tum Tum! I bet these freeze well. I think I may add these cookies to my Christmas regulars. Awesome recipe!

I think I am going to try that "cookie diet" but use these!
