Pork Parmesan

This is my version of veal parmesan.
Though I've never eaten veal of any kind (can't stand the thought of a poor baby moo-moo) I must admit the dish looks delicious.
I substituted pork cutlets for the veal and it turned out quite tasty.

Pork Parmesan

2 cups seasoned bread crumbs
3/4 cup flour
1 1/2 tsp. seasoned salt
black pepper to taste
1 tsp. dried italian seasoning
8 pork cube steaks
oil for frying
1 onion, diced small
12 oz. fresh cherry tomatoes, cut in halves
1/2 tsp. minced garlic
1 small can chicken broth
8 slices mozzerella cheese

Mix bread crumbs, flour, seasoned salt, pepper and italian seasoning together. Set aside.
In large frying pan, pour enough oil to cover the bottom of the pan and begin heating.
While oil is getting hot begin coating the pork steaks in the crumb mixture.
Place steak in hot oil and brown both sides.
Once browned,remove from pan and place in a greased casserole dish. (13x9 or larger)
Cover with foil and bake until done.
I cooked mine for about 1 hour 30 minutes. (Longer than most prefer)
While that is cooking make the tomato sauce.
 Saute the onion in the same pan that you just fried the steaks in. If you have a lot of excess oil in the pan then remove some of it before you begin.
Once the onion is tender go ahead and add the garlic and tomato halves.
Simmer for a few minutes and then add the chicken broth.
This should thicken up a bit because of the leftover flour in the pan from frying the pork.
Let simmer a bit and then turn off and let set until pork is done.
When pork steaks are done pour this tomato mixture over top of the steaks.
Place a slice of mozzerella on top of tomatoes and place back in the oven until the cheese is melted.
ENJOY!


Well, No whining today guys and gals!
My day has gone much better with no aches or pains so far! (Keepin my fingers crossed though...the day is not over yet.)
I'm off to do a bit of sewing before bedtime so I'll have to stop back later to catch up with all of you!

That looks amazing! We don't eat much pork here (aside from bacon, lol) but I think I'll be trying this concept with chicken, and that sauce with those slices of tomatoes looks amazing!
