Lord of the Dance was WONDERFUL!


Last night was FABULOUS!

My Mother's Day gift to my mother came a little bit early this year.

I decided to take her for a girls night out to see Michael Flatley's Lord of the Dance. A couple months back I saw the advertisement for the show and told my sister-in-law about it so she decided to take her mother too! Katie also got to go. I thought that she would enjoy it and it would create a wonderful memory for her of an evening out with Mommy & Grandma.
I can't even begin to explain how much I enjoyed this. The costumes, dance and music were awesome. I just sat back in amazement in the coordination, strength and talent that these dancers displayed. This was money well spent (to me) and we all enjoyed every penny of it. Here are a few pictures that I took. They aren't the best. I sat on an end seat with an usher standing right above me so I didn't really get many chances to sneak a picture. :0)

Leftovers make easy Shredded BBQ Pork Sandwich Melt


One day last week I put two packages of boneless pork ribs in the crockpot, added a bottle of BBQ sauce and let it cook all day. We had the ribs that night for dinner and then I took the remaining ribs and shredded them and added a bag of shredded cheese to it. I mixed it up and put it in a freezer bag and froze it.

Yesterday was a busy day with schooling, laundry, sewing and hosing a winter's worth of dust off of our three porches. So, at the end of the day I needed something fast for dinner and here's what I came up with.


BBQ Pork Sandwich Melts

5 cups Boneless BBQ Pork Rib leftovers
8 oz. shredded cheese
1 onion, diced
3 carrots, finely shredded
splash of olive oil
1 cup BBQ sauce
buns or toast
American cheese slices

Defrost the bag of leftover BBQ ribs mixed with the cheese.
Saute the onion & carrots in olive oil till tender.
Once veggies are tender then add the pork mixture to them.
Add BBQ sauce and simmer.
Toast bread or buns.
Spoon pork onto bread and top with a slice of cheese.
ENJOY a quick and easy dinner!

Sugar-Free No Bake Cookies


I made No-bake cookies yesterday to take to our Sunday dinner with the family. The problem is that my Dad is diabetic and if it's there he will eat it.

"It" being anything that has sugar in it that he is not supposed to eat.

So I made a double batch of regular no-bakes and then thought I would try a sugar free version for him.
Dad uses different sugar substitutes like Stevia, Stevia Blend and Splenda.
The only thing I had at my house was Stevia and I didn't think that would do very well in my concoction.
So I went over and asked Dad which he though would work best and he said to try the Stevia Blend. So I got some out of his cabinets and went back home and got started.

They worked!

They still don't taste as good as the "real" thing but I guess when you are diabetic you have to settle for what you CAN have.


Sugar-Free No-Bake Cookies


1/4 cup milk
1/2 cup Stevia Blend
1 1/2 tbsp. cocoa
1 1/2 tbsp. peanut butter
1/2 stick of butter
1 1/2 cups oats
1 tsp. vanilla

Combine milk, Stevia Blend, cocoa, peanut butter & butter in a pan.
Stir and bring to a boil on the stove.
Let boil for 1 1/2 minutes.
Remove from heat and add vanilla & oats.
Stir until mixed well.
Drop by tsp. or tbsp. onto waxed paper.
(This makes about 20 tbsp. sized cookies)

Can't Leave Alone Bars


Yesterday was one of those days!
I got lots of done around the house like stripping the beds and washing everything, dusting, scrubbing, paperwork, schooling and lots more.
What I didn't get done was blogging and cooking supper.
However, I did make these bars for dessert.
I figured the dessert was more important.
(Yes ! the kids got fed. Just not a big, fabulous meal.)

I'm not sure who to give the credit to for this recipe but it's not me. I have found it in many of the local cookbooks around here.


Can't Leave Alone Bars


1 box white cake mix
1/3 cup oil
2 eggs
1/4 cup butter
1 can sweetened condensed milk
1 cup chocolate chips

Mix cake mix, oil and eggs with a fork in a medium bowl.
Press half of this mixture in a greased 13X 9 pan.
(I get my hands a bit wet so that the cake mix doesn't stick to my hands.)
In a saucepan, melt butter, milk and chips.
Pour over the cake layer.
Take the remaining cake mixture and roll into little balls and then flatten the balls out in your hand.
Place the flattened circles on top of the chocolate layer.
Bake at 350 degrees for 20 minutes.
I usually cook mine for about 20-30 minutes or till the center is not so jiggly.
This is a really quick but fattening treat to make when you are in a hurry.
I have tried this with a chocolate & a yellow cake mix and we all have agreed that we like it better using a white cake mix.

Homemade Cleaning Products


I have been reading many articles on homemade cleaning products and decided I'd give them a try. Here are a few that I have tried and really like.


#1. I have been making my own laundry detergent for almost a year now and I love it. It takes a little time to make but it definitely saves me money. You can find out how to make your own by looking under cleaning recipes on my sidebar.


#2. Alice's Wonder Spray is an all-purpose cleaner recipe that I found over at Tammy's Recipes. I mixed a bottle of this up for everyday use but I also mixed a large batch of it up and used it to scrub my walls down with a few weeks ago. It worked well on the little fingerprints on the wall. :)

1/4 cup white vinegar
1 tbsp. borax
3 cups hot water
squirt of dish soap
32 oz. spray bottle
Mix the vinegar and borax in the bottle. Fill with hot water and shake to dissolve the borax and then add the dish soap. (This is the blue bottle that is in the photo.)


#3. Floor Cleaner
Here is what I mixed together the other day to scrub my linoleum floors and it worked well.
1/4 cup borax
1/4 cup baking soda
1 1/2 cups vinegar
hot water
Add the borax, baking soda and vinegar to a scrub bucket. Let it bubble up for a minute and then fill the bucket the rest of the way up with hot water.



#4. Homemade Fabric Softener Sheets

My sister-in-law Joan passed this on to me (It's the milky white substance in the photo.) and here is how I made mine.
Take a coffee can or other container of about the same size.
Add 1-2 capfuls of store bought liquid fabric softener to the container and then fill it the rest of the way up with water.
Next I took two old washcloths and cut each one in half giving me a total of 4 strips. Place those in the liquid.
Now when I dry a load in the dryer I just open my container and pull out one or two strips and wring them out good. Toss them in the dryer with the clothes and turn dryer on. When clothes are dry I take the strips out and toss them back into the coffee can for the next load. I have just started doing this within the past month but can already see that it is saving money and it does make my clothes soft and static free.
**I purchase a lot of these cleaning ingredients in bulk so that I always have enough on hand. I buy the Borax and vinegar at Walmart. The baking soda I buy in big bags at Sam's Club. **

Girls Night Out... in One Week!


We have begun the countdown!


In one week we will be attending the Lord of the Dance Concert(Irish musical & dance) at the Wheeling Civic Center and we can hardly wait. It's going to be a wonderful girls night out.

A few months ago my sister-in-law Crys and I decided to do something a little different for Mother's Day this year. We bought tickets to take our mothers to this show on April 28th at the Wheeling Civic Center.

This of course, will be a Mother's Day present to ourselves also. It has been years since I have been to anything like this. I believe the last concert I went to was with my husband about 5 or 6 years ago. We went to the Capital Music Hall to see Kenny Chesney.
The last time I went to see the Wheeling Symphony was probably close to 20 years ago and I love to hear music like that. However, if I ask my husband to go to something like this with me then I just get that "yeah right" look from him.

So, this is going to be awesome!

A chance to do something that I haven't done in years, give my Mom a fun night out and hopefully create a long-lasting memory for my daughter to cherish.

Badminton and Bunnies


We had a great weekend here with lots of sun and warm temperatures. The picture above is of the my nephew along with my two boys. You could call them the Three Stooges. :0)

They all have badminton rackets in the picture because that is how we spent our weekend. Outdoors playing badminton. There were six of us all together. I had to go and buy another set of rackets so nobody got left out. It was quite interesting and I'm surprised that no one got hurt with that many of us playing. There were a few times that the kids went to swing, lost their grip and the rackets went flying. Then there was the time that my husband did the same thing and the racket went flying all the way up onto the roof of the building.
We had lots of fun and tons of laughter as we played. The kids got up this morning and asked if we would go out and play with them again after school but it's raining right now so we will have to see how the weather is.

We found a baby bunny nest in my Mom and Dad's yard this weekend along with 6 babies. They were so cute! Actually, it was Maggie, my peek-a-poo, that found them. Needless to say we had to take both of the dogs home after that so that they didn't get hold of the rabbits. The kids had fun watching and counting the babies.

Gardening Update






Carmen asked me a while back how my garden plants were doing. Well we finally got some sun after several gloomy, cold days so yesterday I took all the plants outside to set in the sun. While I had them out there I took a few pics. They aren't the best but they will have to do. The tomato plants don't look very tall in these pictures but they are about 4-5 inches tall. They really seem to have sprouted up just within the past week.
(These are not the first batch of seeds that I planted. The first batch all died so I had to replant again. I don't think they were getting enough sunlight. But this time around I was sure to get them in good light.)
Anyways, it won't be too long before I can begin to plant them in the garden. I'm hoping they get bigger withing the next few weeks. The peppers are the smaller ones and they are SMALL. Not sure why they are taking so long.

In the garden I have already planted potatoes, onions & peas. This is the first year that I have planted peas so I'm not real sure what to expect but I did notice some of the plants beginning to pop through the soil.
We are supposed to have a nice warm & sunny weekend here so I plan to get outside and get the grass cut again and just enjoy the weather.

Mark brought home some new sand for the sand box last night so I know where Katie will be. She'll leave me a trail of sand across the kitchen floor as she comes in the back door. I had to sweep it up last night when she came in and that reminded me of the endless trips in and out last year and all the sand that I swept up. Oh well, she's having fun. She loves to be outdoors & I'd rather see her do that than just sit in the house.

I'm off to bake a bit and figure out something for supper tonight so I'll be back later to visit all of your blogs.

Chicken Stuffed Shells


Has anyone ever heard of these before?

My friend Misty has made this meal many times and her whole family loves them. We passed recipes around last summer and my sister-in-law Crys began making them. I looked at the recipe and simply thought wow that's way too many carbs (starch) in one dish so I never even tried it.

Well last week I finally gave in and called to get the recipe from her.

I made them and they were good but I still think it's way too much starch so it's not something I will be making very often. Here's how they are made if you'd like to try them.


Chicken Stuffed Shells


4 chicken breasts
box of large shells (stuff shells)
box of dry stuffing mix (like Stove Top)
3 cups chicken broth
2 cans cream of chicken soup
miralce whip

This made a 13X9 pan so if you only need a serving or two I'd cut this recipe in half.
Boil chicken breasts in water till done.
Take out of water and let cool.
Once cool, cut the chicken into small chunks.
Cook box of stuffed shells in water and then drain. (I think I only used about 24 of these.)
In a bowl, mix the chicken chunks, dry stuffing mix and just enough miracle whip to make it all stick together. ( I used about 1-2 Tbsp.)
Spray a 13X9 pan with cooking spray and then pour 1 cup of chicken broth into the pan.
Stuff your shells with the chicken mixture and stuff them good. (don't under stuff)
Place shells in pan with the chicken broth.
Once all shells are stuffed & in the pan then take and mix 2 cans of cream of chicken soup and 2 cups chicken broth together.
Pour this over top of all the shells.
Cover with aluminum foil and bake 45 minutes at 350 degrees.
The last 5 minutes of baking time I removed the foil to brown slightly.
I served this with mashed potatoes & a vegetable. The soup created a nice gravy to pour over your potatoes.

Exercise Ball Spells Comfort for Me (Fibromyalgia Post)


I know this sounds strange but it works for me.


This large exercise ball was on my Christmas wish list this year so my husband bought one for me and I LOVE it!
I'll explain why...
I was recently diagnosed with fibromyalgia, which causes pain throughout my body. This affects my muscles and joints, therefore, when I do a normal exercise routine I end up in misery. Now, I'm not talking the typical "no pain-no gain" thing. I'm talking whole body pain, feel like you've got the flu pain, chest pain & fatigue that will last from as little as a few days to several months. It is awful!


So that is where this ball comes into the picture.


My muscles feel much better when I can do gentle stretching (as opposed to heavy exercises) and this often alleviates some of the pain. So with this ball I can lay my back upon it and kind of roll with it to stretch some of the muscles in my back.

My most favorite thing to use the ball for though is just as a computer chair. Sounds goofy, I know.
I used to have days that I couldn't sit for very long in one spot because my hips would hurt so bad. So I started using this ball as a chair when I was at my computer. I would kinda move around with the ball just a little from side to side or even lightly bounce on it....now I know the mental picture of this is hilarious but it really helps.
It seems to relieve the pressure and pain in my hips by doing these gentle movements while sitting for any length of time.

And of course, when I'm not using it, it sits in my room (as pictured) until one of the 3 kids go and get it to use it as a toy to bounce on.

It's been a great multi-purpose purchase.

Veggie Burgers



Here is a recipe that I use for a meatless dinner. Of course, no one in my household will eat them other than me so when I make them I split them with my Dad who is vegetarian and will eat them.


I am still playing with seasonings in this recipe. Each time I make them I add a little something different till I come up with just the right one. So keep that in mind and don't be afraid to add your own combinations to this.




Veggie Burgers



1/4 cup minced onion
1/4 cup green or red bell pepper, diced small
1 small carrot, shredded
1 can of cannellini beans (white kidney beans), drained
1 egg, beaten
1/3 cup italian seasoned bread crumbs
1 tsp. Watkins Ground Beef Seasoning
pinch of dried cilantro
pinch of celery salt
black pepper
salt
olive oil


Heat olive oil in skillet.
Add onion, pepper & carrot and cook till veggies are tender.
Set aside & let cool.
In a bowl, mash the drained beans.
Add egg, bread crumbs, veggies and all seasonings.
Mix good and shape into 4 patties.
I usually make mine in the morning and then refrigerate them till dinnertime.
When ready, just heat a little olive oil in a skillet and then add the patties.
I cook these on a medium heat and brown them on both sides.
Place on a hamburger bun with all your favorite toppings.
(lettuce, tomato, mustard, ketchup, pickles...etc.)

Easter Leftovers


We had Easter Dinner at my Mom & Dad's this year. Mom made a ham and I took a turkey breast. We also had scalloped potatoes, green beans, rolls, cheese cake dessert and a DQ Ice Cream Cake. Needless to say, there were plenty of leftovers to go around. We split them all up and today I used mine for a quick dinner.

It's been a great LAZY day here. I got to sleep in this morning, didn't have to cook a big meal and I even found time to stitch a bit.

So here is what I made with the leftovers.
Sorry, this picture makes everything look yellow. Just pretend the potatoes look white cause they were :)

Turkey Bacon Cheese Sandwiches


bread
leftover turkey slices
bacon
cheese
lettuce
tomato
Miracle Whip or Mayo


I fried some bacon and then drained all but about a tsp. of the grease from the pan.
I placed the cold turkey in the same pan and heated it till warm.
The bacon grease just added a little extra flavor & a few more calories:0)
I toasted the bread in the toaster and then assembled the sandwich.
Toast-turkey-bacon-cheese-lettuce-tomato-mayo & any other toppings you wish.
I served this with my sour cream & chive potatoes (which I forgot to add the chives this time) and some applesauce.

I thought I would have had this posted a little earlier than this but we are on Spring Break this week so I figured I might as well take advantage and sleep in while I could. You know, just a little extra "beauty rest".

Anyone Ever see the Peeps Bus Before?


Since Easter is the holiday that I associate Peeps with the most I thought I would share these pictures.

These are from 2003. Logan was in the first grade and Gage was just three years old at the time. Anyways, Logan was in school at the time and Gage & I were on our way home from the grocery store. We passed this brightly colored bus and thought, What in the world? We followed it as it headed towards our house. It ended up going to the elementary school that Logan was at so I hurried and put my groceries away and grabbed my camera and ran back around the corner to school.

The whole school came out to tour the Peepsville Bus and so did we. It is a BRIGHTLY painted bus with little display windows inside. Each window contains a themed scene of Peeps like Easter, Halloween, Christmas and so forth.

I think the one in the picture is a summer beach scene and Halloween.

After each child walked through the bus and exited at the back they received a Peep and a sheet of stickers.

It was cute and I got lots of pictures but these were the only ones that weren't full of kids. ( I didn't want to post any other child's photo without asking permission first:)

It's not everyday that you see the PEEPS bus driving through your town!

Inspired by Others


I have been browsing through many a quilt blogs and am truly amazed in the wonderful quilts that these ladies create. This photo is of a quilt that I have used since I was a child. It was made by my great-grandmother, a woman that I never even met. It was like my "security" blanket when I was growing up. It is made of the old cotton that keeps you warm in the winter yet cool in the summer. It's just perfect! The problem is, it's no longer in any condition to be used. It's faded, torn and very fragile. I have it packed away in my cedar chest for fear that it will rip and tear worse than it already is.

This butterfly and all the others have lost most of their color and some of the stitching but to me it still brings warmth and the lovely thought of a lady sitting in a chair stitching away by hand.

It makes me wonder who it was made for?

Did she make it for my Grandmother or her grandkids or did she make it for herself and it was only passed on when her time came?


I do know that my Grandmother gave it to my Mother and we used it when we were growing up. After I got married I told my Mom that I wanted the old butterfly quilt and after a l..o..n..g time she finally handed it over. I used it for a good many years till it began to deteriorate and then packed it away.
I believe I enjoy sewing as much as I do because of that old quilt. I love the idea that you can make something with your hands (not store bought) that has meaning and love behind it and then give it to someone special that will appreciate it and know what it is "worth".

I have made only a few quilts in my life and they were very basic. These were small baby quilts for my kids. They've outgrown them now but they too are stored in the cedar chest for one day down the road that I have grandchildren. (Don't even want to think about that right now!)
The first one on the left was made when I was pregnant for my first child. I stitched it all by hand and it actually has held up better than any of them that I used the machine on.
The next one was made of flannel fabric while I was pregnant for child #2.
The 3rd and 4th were made a little larger to fit a toddler.
The last two of course were made for my daughter.
My time spent here in blogland viewing everyone's fabulous creations has inspired me to get busy again. I have tons of fabric just sitting around. I also have some stitching patterns that could be added to a quilt. Lots of ideas going through my head, now if I could only have a few more hours in each day.

Cheesy Vegetable Casserole


Here is the recipe that was pictured with the Crispy Buttermilk Chicken on Friday. I have found it posted in many of our local cookbooks by lots of different women so I'm not sure who would actually get the credit but I can tell you it is not me.

I'm not a big fan of frozen mixed vegetables but all the butter, cheese and crackers makes them yummy and so worth it. It's far from being low fat but I only make it every once in a while so it's OK!


Cheesy Vegetable Casserole
2 large pkg. frozen vegetables
1 stick butter
1 lb. Velveeta, cubed
1 tube Ritz crackers, crushed
Cook vegetables in microwave till tender.
Melt butter.
Stir crackers into butter.
Grease a 9X13 or a 2 qt. casserole.
Put vegetables in pan & add cheese on top.
Top with cracker & butter mixture.
Bake 20 minutes at 350 degrees.
Now that was the original recipe.
The dish that I have pictured was changed a bit.
I cut the recipe in half plus I didn't have regular Velveeta so I used a store brand white "Velveeta" cheese plus I didn't have Ritz so I just used plain saltines.
It tasted just the same as the original version.

Crispy Buttermilk Chicken


I usually post earlier in the day but today has been one of those days.
I started some spring cleaning yesterday and worked my butt off all day.
After dinner my sister-in-law and I took our nightly 3 mile walk and by the time I got home I sure was feeling it.
I just overdid it a bit. Frustrating because I used to be able to go..go..go all the time and now if I try to go..go..go I end up in misery for a couple days. (Fibromyalgia)
I missed being on the computer yesterday so last night before bed I got on only to learn that I had a problem with my computer so I was up till midnight figuring that mess out.

My intentions for today, since it was going to be cool and rainy was to be lazy and catch up blogs and stitch a bit.
BUT....my youngest son got up with us at 5:30a.m. complaining of an ear ache.
So, off to the Drs. today! She said he has an ear infection so then we headed to the pharmacy. By the time I ran to the store and got back home there wasn't much time to get on the computer.
So here I am...dinner & dishes are done and I finally have time to sit down.
Now I just have to try to stay awake.

Good news is... the weekend is here so I can catch up on some rest and just be lazy. Maybe I WILL get some stitching done after all. I'm sure you are all tired of hearing me whine so I'll get to the chicken recipe. My sister-in-law passed this on to me. It's simple and tasty but it does need to be started a night ahead of time.


Crispy Buttermilk Chicken
(Needs to marinate overnight)

3-4 lbs. chicken
1 cup buttermilk
1/2 cup cornmeal
1/2 cup flour
1 1/2 tsp. salt
1 1/2 tsp. chili powder
1/2 tsp. oregano
1/4 tsp. pepper
1/3 cup melted butter

Place chicken in a large zip bag and add the buttermilk.
Refrigerate overnight to marinate.
Combine the next six ingredients for coating.
Remove chicken from bag and roll in coating.
( I like to cover my pan in aluminum foil for easy clean-up.)
Place chicken on a greased cookie sheet & drizzle the melted butter over top.
Bake uncovered 50-55 minutes at 350 degrees.

A giveaway, Spring Cleaning and a Brownie Recipe

Now to the spring cleaning! It is supposed to be around 68 degrees here today so I thought I might as well take advantage and get a start on my spring cleaning . I'll be busy washing, walls, curtains, etc. today so I'll have to catch up on all of your blogs later tonight. I am trying a new cleaning recipe out today so I'll let you know later what I think of it.


I saved the best for last ..... DESSERT.

I am searching for a good chewy brownie recipe that is homemade using cocoa powder instead of the baking squares. If anyone has one they would like to share please let me know. Here is the recipe that I tried the other day. It was more of a cake brownie & I thought it was really good and chocolatey however, my husband prefers the chewy kind. See that missing strip of brownies in the photo. Well, I had to make sure they tasted alright before I passed them out to everyone else!


Cocoa Brownies

Makes (2) 8x8 pans so cut the recipe in half if you need less.

2 cups sugar
4 eggs
2 tsp. vanilla
2 sticks butter, melted
1 cup flour
1/2 tsp. baking powder
1/2 tsp. salt

Mix sugar, eggs & vanilla.
Add melted butter and stir.
Add flour, baking powder & salt.
Pour into two 8X8 pans and bake 25-30 minutes at 350 degrees.

Could someone help ME?

I can not figure out how to make the links underlined in my posts so that people can see that they can click on them.

In my last post The Chickenista, Brad Paisley and the three blogs that I passed my award on to are all able to be clicked on but you can't see that unless you scroll over it.

Help me please.
I know it's some little thing that I am missing but I get so frustrated trying to figure it out.
If anyone out there can help I'd really appreciate it.

Looks like I've been Scrapped!


Veronica over at The Chickenista was nice enough to scrap me the other day.

With this award I am to list 10 honest things about myself and then pass the honor on.


This is getting harder and harder to do because lots of my favorite blogs are going tag-free plus I love them all. I love the fact that I can hop on here every day and learn something new, catch up on a cyber friends day to day life or just simply browse through the many beautiful pictures that all of you post.


10 HONEST things about ME:


1. I am a south paw.

2. I haven't really changed my looks much since high school. Still wearing the same clothing styles, same hair style and so forth. Old habits are comfy and hard to break :)

3. I don't watch much t.v. but when these shows are on I am ADDICTED.
Survivor, Deadliest Catch and Days of Our Lives.

4. I never EVER eat seafood.....Yuck!

5. I don't wear make-up. Wouldn't have the faintest clue as to what to do with it.

7. I took some piano lessons when I was a child.

8. I'm not very coordinated or graceful.
9. One of my favorite snacks is crackers with cheddar cheese & grape jam.

10. I love to be organized.
