Trying my hand a making homemade bread


This is not something totally new for me but something that I don't do often. If I did I'd be HUGE because there is nothing better than warm homemade bread with real butter. I have tried a few recipes lately but thought they tasted more like a sweet bread so I thought I'd try something on my own. I made one batch that I used half wheat flour and half white flour and it went to the garbage can. It wouldn't even mix up. I figure it needed more oil or liquid but at that point I was done with it.
As my attempts went on I finally came up with this and so far like it the best.



Homemade Bread


1/4 cup sugar
1 cup warm water
1 tbsp. dry yeast
2 tbsp. olive oil
1/2 cup whole wheat flour
2 1/2 cups all purpose flour
3/4 tsp. salt

In mixing bowl, let sugar dissolve in warm water.
Add yeast, give it a gentle stir and let sit 5 minutes.
Add oil, flours, and salt.
Mix all together.
I use my Kitchen-Aid mixer with the dough hook attachment and just let it do the work of kneading for about 5 minutes on low speed.
Place in a greased loaf pan.
Cover with a tea towel or light-weight towel and let the dough rise.
The time will depend on the warmth of your house.
I place mine on top of the fridge and let it rise for about 2 hours.
Uncover and bake at 350 degrees for 25-30 minutes.
This makes one loaf.
I always try to have a fast & simple dinner on Friday nights so I used this bread this past Friday to make turkey melts and boy were they good.
I just sliced & buttered one side of the bread. Placed butter side down on griddle and then topped with mesquite turkey breast and a slice of cheese. Put other slice of buttered bread on top and cook till both sides are toasted. (I have been using my bacon press when making sandwiches this way. It makes them flat and reminds me of a panini.)
Anyways, when both sides were toasted I removed them. Opened them up and added shredded lettuce, tomato slices and then drizzled a little coleslaw dressing over the top. YUM!

My very first stitchery ~ completed


Not too long ago I began working on my first stitchery. I have done cross-stitch in previous years but find that now a days I can't see patterns as good as I once could (even with glasses) and I don't have enough quiet time to actually sit and look at a pattern book and then look & count on my fabric to sew it. But with a stitchery, you transfer the image right on to your fabric and then stitch away. For me, this is great because when I sit down to sew and have to get up 50 times to see what one kid or the other needs, what they have done or to simply break up fight number 10,000 for the day I can easily go back to it when I'm finished and simply start stitching. I don't have to recount again.

This was intended to be a picture but in the end I had cut my batting just a bit too short so when I went to frame it that "empty spot" showed through the muslin. I just made it into a little pillow and figured it was a lesson learned.

I have some free time today so I'm off to pick another pattern out to start stitching.

Sweet Potato & Zucchini Fries


I love the taste of homemade sweet potato fries, however, I don't make them very often. You see, I live with the world's pickiest eaters ever! They don't like to try new things, they don't care for vegetables, and one will hardly touch a piece of meat, so they all make meal planning a pure pain in the rear.

So, when I make sweet potato fries I always throw in some plain ol' white potatoes to please everyone else and here is how I make them!


Oven Baked Sweet Potato Fries

sweet potatoes
white potatoes
olive oil
parsley
McCormick's Montreal Steak Seasoning
(You can use any of your favorite spices in place of this.)

Wash the potatoes.
Peel if you wish.
Slice into french fry sticks or wedges
Place in large bowl and drizzle olive oil over them.
Toss them around good so that they all get covered in oil.
Place on a greased baking sheet.
Sprinkle seasoning over top of them.
Bake in oven at 425.
Bake 15 minutes and then flip them over.
Bake another 15-30 minutes.
Check on them every so often so that you don't burn them.
The cooking time varies depending on the amount that I am making.

I have fooled my kids before with the zucchini fries. I placed them on the table along with the potato fries and they ate them and liked them.

Zucchini Fries

zucchini
Italian bread crumbs
Parmesan cheese
oregano
basil
salt
pepper
2 egg whites

I usually just toss the ingredients into a bowl so I don't have the measurements to share. Sorry!
Wash & peel zucchini.
Cut into french fry sticks & set aside.
Mix the bread crumbs, Parmesan and the spices together and set aside.
In another bowl,beat the egg whites till frothy.
Dip zucchini sticks in the egg white and then roll in crumbs.
Place on well greased cookie sheet.
Bake at 450 degrees for 7 minutes or till crunchy.

Easy Chicken Enchiladas


This one was simple to make and yummy. My husband came home last night and took one bite and said " now that's some good stuff."


Easy Chicken Enchiladas

1 onion, chopped
1 clove garlic, minced
Olive Oil
3 lbs. chicken breast, cooked & shredded
24 oz. jar salsa
8 oz. cream cheese, cubed
1 tbsp. cilantro
2 - (1.25oz.) packets of taco seasoning
10 oz. reg. or mild Rotel tomatoes (optional, but adds some heat)
8 oz. shredded cheddar cheese
10 large flour tortillas
taco sauce

Cook & stir onion and garlic in hot oil in a large skillet.
Add chicken, salsa, cream cheese, cilantro, taco seasoning & Rotel.
Let simmer till cream cheese melts and blends.
Heat tortillas in microwave so they won't break apart as you roll them.
I put 5 tortillas in at a time for about 35 seconds.
Spoon chicken mixture onto the center of each tortilla. (about 3/4 cup)
Fold tortillas and place seam-side down into a greased 9X13 baking dish.
Top with taco sauce or more salsa.
Sprinkle cheddar cheese on top and bake for 15-20 minutes at 350 degrees.
Serve with shredded lettuce, sour cream, olives and any other toppings that you like. These could also be made using pork or beef.
This recipe can be cut in half. It made enough for 5 people and still had leftovers for the next day.

Parmesan Cube Steak


Cube steak is not a cut of meat that I care much for, however, sometimes the price is right and it ends up in my freezer. When it does I try to find something different to do with it. My very favorite thing to make is Marlboro Man's Favorite Sandwich off of http://thepioneerwoman.com/ . If you haven't tried this before you really should. Go to her cooking tab and then look under Cowboy Food. Yum!
Yesterday, at the last minute, I pulled cube steak from the freezer and decided to make Parmesan Cube Steak, a broccoli casserole and I had run out of potatoes so I had to use a box of potatoes which were YUCK! Anyways here is the recipe for the cube steak.


Parmesan Cube Steak


This made 8 cube steaks. You can cut the measurements back if making less.

6 tbsp. flour
1 tsp. salt
1/2 tsp. black pepper
3 eggs
3 tbsp. water
1/2 cup cracker meal ( or crushed crackers)
1/2 cup grated Parmesan cheese
1 tsp. dried basil
Olive Oil
8 cube steaks
2 (8oz.) cans tomato sauce
3 tsp. sugar
1 tsp. dried oregano
1/2 tsp. garlic powder
8 slices mozzarella cheese
A bit more Parmesan cheese

Preheat oven to 400 degrees.
In bowl, mix flour, salt & pepper. Set aside.
In another bowl, whisk eggs and water together & set aside.
In 3rd bowl, mix cracker meal, 1/2 cup Parmesan & basil.
Heat Olive oil in skillet.
Dredge cube steaks in flour mixture, dip in egg mix and then coat with the cracker meal mixture. Place in hot oil and brown on both sides.
Once browned, place in a greased baking dish in a single layer.
Bake in oven.
I baked mine for about an hour but I always cook mine longer than most people prefer so you will have to be the judge of the time.
While that is baking, mix the tomato sauce, sugar, oregano and garlic powder in a small bowl and then set aside.
After meat has cooked for the hour then I removed it from the oven and spooned the tomato sauce mix over top of each steak.
Next place a slice of mozzarella over the sauce and sprinkle with a few flakes of oregano and a bit more Parmesan.
Return to the oven and let the cheese melt.
Enjoy.

A Special Gift



Thirty years ago I met a girl in kindergarten class. That girl ended up being my best and closest friend. The one that you never let go of. The one that is always there regardless of what is going on. The one that answers the phone no matter what time it is and the one that probably knows the most about you.
Yes, we have driven each other crazy over the years but we wouldn't change a thing. Well, her birthday is today.
So, Friday I went in search of the perfect gift for her and I found it. The gift itself may not be perfect but the words upon the gift are.

It's the weekend! -- Garden Started


Sooooo glad the weekend is almost here. Not a whole lot going on today. Just trying to catch up on a few things.

I'm almost finished with one of my Pay It Forwards. Not telling who it's going to or what it is just yet. But I will a bit later.


I think I'm gonna spend the day in the kitchen. I have the urge for some No-Bake cookies and I think I'll make some homemade pizza for supper plus I've got to try some of the cheese bread that Tammy has over at
http://tammysrecipes.com/italian_cheese_bread. It looks so yummy. I will use my dough recipe but I've got to try the dressing on it. Her pictures looks oh so good.


GARDEN STARTED

Tuesday night I went to a Homoeopathic Study Group Meeting and while I was gone my husband and oldest son got the garden all tilled up and ready to go. *Though, once we move the kids fort (still unfinished) then we will make the garden bigger to allow more room for some extra potatoes.* Then on Wednesday, while it was so nice out, we planted onions. I have peas that I believe need to be planted now too, but I have never grown them before so I need to read more about them first. Last year it was so wet that we were late in getting the garden started. This year we seem to be on track, now I just hope the garden does as well or better as last years. Well I'm heading to the kitchen so I'll have to catch up on all my favorite blogs a little later.

The 912 Project


I have seen this symbol recently and didn't have a clue as to what it stood for. I don't watch much TV so I hadn't even heard of Glenn Beck. Thanks to the internet, I now know all about it and highly recommend that everyone go learn more. I will attempt to tell you a bit about it and give a few of my opinions.:0)


The 912 Project


A non-political movement to bring all Americans together, to stand UNITED, as the greatest nation ever created.

It is based upon 9 of the original twenty-eight principles that our country was built upon and a set of 12 values, hence the name The 912 Project. These principles deal with our freedoms and rights as Americans along with 12 good old fashioned values that many have lost.

Honesty-Reverence-Hope-Thrift-Humility-Charity-Sincerity-Moderation-Hard Work-Courage-Personal Responsibility-Gratitude


This movement speaks to me in so many ways. Here is one. Some of you know that I chose to take my children out of public schools this year and began homeschooling. My decision was based on this lack of values and principles in our systems. Not because my children are bad students or cause problems. They are quite the opposite. A few of my reasons:

1. Many teachers (not all) are there for the pay check - not to teach our children.
2. Board of Educations care more about making themselves shine as opposed to making our children shine.
3. This list goes on for numerous systems ( local government, state politicians and so forth.)
It's all just a big series of you scratch my back and I'll scratch your back! You make me look good and I'll make you look good.
(Come on people, stand up for what you truly believe is best. Don't fall into the slime and greed of it all!)

This is just one of the views that I see through my windows here at home. However, it is everywhere in one form or another and trust me, I could go on and on about numerous issues but I won't bore you all.


I'll just say that in a nutshell, I believe that if good values were instilled in people and those people stood up for their beliefs and didn't fall prey to the evils of greed, dishonesty, laziness, and irresponsibility then this country could be as good as it once was. So, while many are being forced to go back to the basics due to our economy, maybe everyone should take a good look and also go back to the basic values and principles that we were built on.

Oatmeal Cake


Here is the Oatmeal Cake recipe that I talked about in yesterday's post.


Oatmeal Cake


1 cup oatmeal
1 1/3 cups boiling water
1 cup sugar
1 cup brown sugar
1 stick butter
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
2 eggs
1 1/3 cups flour
1 tbsp. cocoa

Add boiling water to oatmeal and set aside.
Cream sugars, butter, cinnamon,soda & salt.
Add eggs, flour & cocoa.
Add oatmeal & water mixture.
Bake in 13 x 9 for 35 minutes at 350 degrees.
While that is baking mix up the topping ingredients.

Topping:
1 cup brown sugar
1/4 c. canned milk
1 stick butter
1 cup flaked coconut

Mix all in saucepan over heat till melted.
After cake has baked the first 35 minutes then you spread on the topping and put under the broiler for 5 minutes or till brown.
I never mess with the broiler, I just place the cake back in the oven and let it bake another 5-10 minutes till brown.

This is one of my all time favorite cake recipes.

Homemade Evaporated Milk

HAPPY ST. PATRICK'S DAY!!
I was making my favorite cake the other day, which is an Oatmeal Cake, and half ways through mixing it I realized I was out of canned milk. I'm talking about evaporated milk. I had no way a getting to a store so I looked through my recipe basket and found a recipe that I had saved some time ago but had never tried it. As it turns out, my head must have been elsewhere because I had grabbed the recipe for SWEETENED condensed milk instead of evaporated milk. Needless to say I ended up making both recipes and can now tell you that both DO work.
I don't think I'll be buying the store bought version of either one anymore. Not when I can make my own from scratch.


Evaporated Milk
1/3 cup nonfat dry milk powder
6 tbsp. water
Mix well.
This is equivalent to 1/3 cup of canned milk.

Sweetened Condensed Milk
1 cup boiling water
1 stick butter
2 cups sugar
2 cups powdered milk
Bring water and butter to a boil & butter is melted.
Remove from heat and add sugar & milk.
Blend. ( I used my mixer to do this.)

Hot & Sweet Chicken


This is a yummy recipe that my sister-in-law passed on to me several years ago. It's fairly simple and quick to make. Don't be fooled by the name of this recipe or the fact that it contains hot sauce. The hot sauce is totally hidden beneath the preserves so there isn't a hint of heat in it.


Hot & Sweet Chicken


1 cup apricot preserves
1/2 cup ketchup
1/4 cup soy sauce
2 tsp. bottled minced garlic
1-2 tsp. hot pepper sauce
12 chicken drumsticks or 4 breasts

Mix everything, except the chicken, in a sauce pan.
Heat on stove till preserves are melted.
Pour over chicken & bake at 350 degrees for 40-45 minutes.
(I like to line my baking sheet with foil for this recipe. It really saves you from a big sticky mess!)

An Enjoyable Birthday

First of all, let me Thank You all for the birthday wishes yesterday.
It's nice to have so many kind friends from blog land.


My Mom & Dad watched the kids yesterday evening while my husband took me out for dinner. The hard part was deciding where to go. I said, "let's go somewhere different", but in the end we ended up at my favorite spot.

After we finished our meal we headed out to do some shopping that I had to do. I was hoping to get to a small craft boutique to get a new stitching pattern that I have been wanting but they were closed when we got there.


**I was at another craft store this morning and they were closed for the day is what the sign read. I know the economy has to be effecting small places like these. But I really hope they ALL can stay afloat in these rough seas.**

Anyways, we shopped and then headed home to pick up the kids. The kids wanted me to open my presents so we did that.
Let me just say that I LOVE Tractor Supply and I love that my husband always knows where to go and how to pick out things that I will enjoy.

I love horse stuff so both of these were perfect. Perfect ending for a perfect day!

Just another day?


Just another day?

Not at all.

It's my 36th Birthday!

Well I'd have to say 26 would be better than 36, but 36 is better than 46, 56 and so on.

You get my drift don't you?

But then again, it's just a number.

It's all in what you make it.

So here's what I'm making it:


1. A day for ME.

2. I don't have to cook a thing.

3. I don't have to clean.

4. I don't have to wash laundry.

5. I can sit and read or sew all day long.


Now in reality, I will still be cleaning, doing laundry, breakfast & lunch but I WON'T be making dinner tonight. We can go out for that. I do hope to take some extra time out to sit and stitch a bit and after dinner I have some shopping that needs done. All in all, we'll make it a fun day regardless of what we do.
And to JOAN:
Yes I'm getting older, but I'm still not as old as you ! :0)

Fried Zucchini & Feta Subs

We took advantage of the warm weather and cooked out this weekend. My Dad is vegetarian so he doesn't eat the usual hamburgers, hotdogs or steaks that we grill so this is what I made for him. This is a recipe that he came up with a while back. I like the different flavors all combined together on a big sub bun. I forgot to take a picture before he dug into this so I will have to add a picture the next time I make this. I also didn't measure everything so you will have to wing it. It's pretty simple though!

Fried Zucchini & Feta Subs
2 sub/hoagie buns
1 medium size zucchini
onions & peppers (I use mild banana peppers)
feta cheese
sour cream
cucumber
1 cup flour
1/2 cup cornmeal
salt & pepper
1/2 cup seasoned bread crumbs (optional)
milk
olive oil
1. Saute onions & peppers and set aside.
2. In a bowl, mix flour, cornmeal, bread crumbs, salt and pepper. Set aside.
3. Wash, peel & dice about 1/4 of the cucumber. Dice small & mix with a little bit of the sour cream. This is going to be a sandwich spread to add to the sub.
4.Wash & peel zucchini.
5. Slice zucchini lengthwise about 1/4" thick.
6. Dip zucchini in milk and then into the flour mix.
7. Place zucchini in heated skillet with a little bit of olive oil.
8. Let brown on both sides till tender & golden.
9. Remove from skillet & place on paper towel lined plate to absorb any extra oil.
10. Slice hoagie bun lengthwise and place face down in same skillet that you fried the zucchini in. (Don't do this if you have a bunch of grease left in your pan. Wipe some of the excess out first.) Let the bun toast a bit and then remove.
11.Now it's time to assemble.
12. Spread some of the cucumber/sour cream mixture onto sub.
13. Layer with zucchini strips.
14. Add some sauteed onions and peppers.
15. Sprinkle Feta cheese over top & ENJOY!

Enjoying the Sunshine!

We have been busy for the past couple of days. Nothing big going on, just outside enjoying the warm temps. and the sunshine.
We got a good taste of Spring!
The furnace is turned off and the windows are open. The laundry got hung out on the line to dry and the kids have been outside playing in the sand and riding their bikes. I know we will still have some cold weather ahead but it makes those last cold days of winter so much more tolerable when you get a few nice days like we have had. It makes you realize that those summer days of play and relaxing evenings of sitting outdoors is just around the corner.

Well I just wanted to pop in for a minute to let you know I'm still here. I'll be back on Monday with a few new recipes and who knows what else.
But for now, I'm off to find a cozy spot to curl up with a good book.

Freeze & Bake Biscuits


Here is the recipe that I made to go along with the Breakfast Casserole. I made a batch and cooked half of them for supper and then froze the other half for another meal. I'll probably use those ones the next time I make sausage gravy.


Freeze and Bake Biscuits


6 cups flour
1/2 cup dry milk
1/4 cup baking powder
1/4 cups sugar
2 tsp. salt
2 tsp. cream of tartar
2 cups shortening
1 1/2 cups water

In a large bowl, mix all dry ingredients.
Cut shortening into flour till it is in course crumbs.
Using fork, stir in water till just moistened.
Cut into biscuit shapes and freeze.


To Bake:
Thawed: 20-25 minutes at 400 degrees.
Frozen: 30-35 minutes at 400 degrees.

Breakfast for Supper


Here's an easy recipe for a breakfast casserole that could be served for breakfast or dinner. Last night we had it for dinner. I also tried a new freeze and bake biscuit recipe that I will share with you tomorrow. I've seen this casserole in many recipe books and I like it because you can prepare it the day before or the morning of and then refrigerate. About an hour before you are ready to eat, just pop it in the oven and bake. I left mine in the oven a little too long so the cheese got a bit too brown but it was still good.


Breakfast for a Bunch


1 lb. hot pork sausage
3 cups frozen hash browns
salt & pepper
dried onion flakes
12 oz. shredded cheddar cheese
12 eggs, beaten ( I only use 7-8)
2 cups milk

Cook sausage in skillet and drain.
Place hash browns in a greased 13 x 9.
Sprinkle with salt, pepper & onions.
Layer the sausage on top of this.
Sprinkle with cheese.
Combine eggs & milk.
Pour over top of casserole.
Cover and refrigerate for several hours.
Bake uncovered for 50-60 minutes at 350 degrees.

Sniffle...Sniffle...Achoo


What a yucky weekend! The kids seem to be getting over their colds but now it's obviously the adults turn. On Saturday we both came down with it. Just all achy, sneezy, sleepy and YUCKY!

Hopefully it will leave us as fast as it did the kids.

I found this bottle of bath salts at Walmart.
It is called Natural Mineral Bath Batherapy - Kids Cold & Flu. It was under $5.00 a bottle and it is tear-free.
I tried it and liked it. They had all different "flavors" of this stuff but I stuck with the children's version that didn't have any "extras" in it. What it did have was eucalyptus, so when you sprinkle it in your warm bath water it really helps to unclog your nose.
My only other thought for today is :)
